While I have thought about my blog countless times since my last post months ago, I have been running a little short on time and have majorly neglected it. Since the end of my junior year of college, I have moved to Madison, WI to work as an intern in the area. Thankfully, I’m living with family friends, so I have been easily adjusting. They’ve welcomed me in with home cooked meals and endless suggestions, directions, and help!
With that being said, it’s been tough for me to adjust to so many nice meals. I’m used to toast and smoothies for dinner, so it’s been a real treat. On top of that, my schedule now that I’m working 40+ hours per week has completely changed, making it much more difficult to stay healthy by working out and avoiding snacks when I’m stuck at my desk working on various tasks. This internship has been an eye opening experience in so many ways– but one of the most important things I’ve been given is a glimpse into my own potential future. It’s been nice to see what my workout schedule and diet will need to look like to stay healthy and happy.
I have discovered that after work, I have zero energy/drive/motivation/desire to do anything other than sitting around and decompressing. So I have turned myself into a morning workout person. I am typically up before 5 a.m. running or spinning. I love coming home and being able to eat dinner and relax. However, it has been hard staying full and focused all day. I prefer snacks to full meals during the day, but it’s painful to try to sit through meetings when you’re counting down the minutes until you can go home and eat dinner.
I’ve been experimenting with different recipes lately so I can avoid snacks out of the vending machine. I was really dying to try making homemade Lara bars, so I’ve been searching for dates. Of course, I went out and bought figs…. Oops. So I had to turn to Pinterest for a backup. That is where I found the inspiration for these fig energy balls!
Before making them, I of course took a bite of one of the figs and hated it, so I didn’t have super high hopes for these! Thankfully, the finished product is a bit better! If you’re looking for something new, I would definitely recommend!
- 1 c. sun-dried figs
- 2 scoops chocolate mint protein powder
- 1/2 c. oats
- 1 Tbsp. chia seeds
- 1 Tbsp. raw honey
- 1 tsp. vanilla extract
- Peanuts to taste
Combine ingredients (I used a mixer– if I was at home, I would use my food processor) and then roll into balls. These seem to be like any other energy ball, where you can add or omit whatever you choose. I have high hopes that they will be a nice mid-afternoon pick me up… and if they aren’t, I will just have to buy *dates* instead of figs next time. 😉
